Screening of high iron-zinc wheat genotype and its nutritional function study

Iron and zinc deficiency are the most common micronutrient deficiency in China, and biofortified wheat is an effective and economic mean to prevent it. The proposed project will cooperate with HarvestPlus and CIMMYT, with a aim to screen Chinese wheats and introduced CIMMYT germplasm, understand stability of high iron and zinc wheat varieties. Pilot field will be planted with high yield, disease resistance, widely adapted wheat varieties with high iron and zinc. Iron and zinc contents in wheat flour will be tested by atomic absorption spectrophotometry. The factors affecting their bioavailability will be analyzed. Their bioavailability and the efficacy will be evaluated in Mianxian County, one of the serious anemia in Shaanxi province, by animal and human trial. These data are essential for enabling breeding to set the nutritional target, so that consumption of normal amounts of stable foods can result in almost meeting their Dietary Reference Intake (DRIs), so as to provide an effective, simple, convenient and safety dietary measures for Chinese people especially those in western poverty regions, to improve the micronutrient malnutrition, to prevent iron/zinc deficiency and its relative diseases.
